Date and rice lunch box salad

Ingredients

| 3 | cups | Cooked white and wild rice Mix |
| 1 | medium | Tart green apple; cored And chopped |
| 1 | cup | Cooked ham; diced |
| 1 | cup | Sliced celery |
| ⅔ | cup | Chopped dates |
| ½ | cup | Red onion; finely chopped |
| ½ | cup | Olive oil; extra light |
| ¼ | cup | Fresh orange juice |
| ¼ | cup | Red wine vinegar |
| Salt and pepper; to taste | ||
Directions
ORANGE DRESSING
Dice 4 ounces of cooked ham to make about 1 cup.
Dressing: Whisk together all the ingredients untill well combined.
Salad: Combine all ingredients for the salad and toss to mix. Add the dressing and toss to coat. Chill 2 to 3 hrs. before serving.
