Curried beef and fruit salad

Ingredients

12ouncesDeli roast beef; sliced 1/4 inch thick
1largeApple; cut into 1/2 inch pieces
2smallsPeaches; into into 1/2 inch pieces
¾cupChopped celery
1Green onion; sliced
1cupNonfat plain yogurt
tablespoonChopped chutney
1teaspoonCurry powder
Boston or leaf lettuce
2tablespoonsSlivered almonds

Directions

From: Cheryl Miller <csmiller@...> Date: Wed, 26 Jun 1996 21:44:50 +0000 Stack beef slices; cut lengthwise in half, then crosswise into 1½ inch wide strips. In large bowl, combine beef, apple, nectarines, celery, and green onions.

In small bowl combine yogurt, chutney and curry powder until well blended.

Add to beef mixture and toss to coat. Cover and refrigerate at least one hour.

To serve, arrange lettuce on serving platter; top with beef mixture.

Sprinkle with almonds. Serves 4.
