Curried beef and fruit salad

Yield: 4 Servings

Measure Ingredient
12 ounces Deli roast beef; sliced 1/4 inch thick
1 large Apple; cut into 1/2 inch pieces
2 smalls Peaches; into into 1/2 inch pieces
¾ cup Chopped celery
1 \N Green onion; sliced
1 cup Nonfat plain yogurt
1½ tablespoon Chopped chutney
1 teaspoon Curry powder
\N \N Boston or leaf lettuce
2 tablespoons Slivered almonds

From: Cheryl Miller <csmiller@...> Date: Wed, 26 Jun 1996 21:44:50 +0000 Stack beef slices; cut lengthwise in half, then crosswise into 1½ inch wide strips. In large bowl, combine beef, apple, nectarines, celery, and green onions.

In small bowl combine yogurt, chutney and curry powder until well blended.

Add to beef mixture and toss to coat. Cover and refrigerate at least one hour.

To serve, arrange lettuce on serving platter; top with beef mixture.

Sprinkle with almonds. Serves 4.
