Curried artichoke salad

Yield: 4 Servings

Measure Ingredient
1 pack Chicken flavored rice
2 \N Or
3 \N Green onions; sliced thin
½ \N Green bell pepper; chopped
8 \N Or
10 \N Stuffed pimento green olives; sliced
2 \N Jars (6-oz) Cara Mia marinated artichoke hearts; drained
1 teaspoon Curry powder
½ cup Mayonnaise
1 \N Or
2 cups Cooked; cubed chicken

Prepare rice. Mix together all other ingredients. After rice is cool, combine with mixture and let stand over night. Serve on lettuce leaf or alone with olives and tomatoes. ARKANSAS TODAY, CHANNEL 11, KTHV 04/17/1991
