Curried artichoke salad

Ingredients

3Green onions; sliced thin
½Green bell pepper; chopped

10Stuffed pimento green olives; sliced
2Jars (6-oz) Cara Mia marinated artichoke hearts; drained
1teaspoonCurry powder
½cupMayonnaise
1Or
2cupsCooked; cubed chicken

Directions

Prepare rice. Mix together all other ingredients. After rice is cool, combine with mixture and let stand over night. Serve on lettuce leaf or alone with olives and tomatoes. ARKANSAS TODAY, CHANNEL 11, KTHV 04/17/1991
