Measure | Ingredient |

3 pounds | Pork shoulder - seasoned |
⅓ cup | Lime or lemon juice |
1 each | Onion, sliced |
½ teaspoon | Oregano |
3 eaches | Garlic cloves |
Season meat with salt and pepper. Pour lime or lemon juice over roast. Place onion slices over roast. Let stand in refrigerator 1-2 hours. Split meat in places and add garlic plugs in slashes. Roast at 325 degrees for 1½ - 2 hours or 35-40 minutes per pound.
