Cuban pork roast

Yield: 4 servings

Measure Ingredient
3 pounds Pork shoulder - seasoned
⅓ cup Lime or lemon juice
1 each Onion, sliced
½ teaspoon Oregano
3 eaches Garlic cloves

Season meat with salt and pepper. Pour lime or lemon juice over roast. Place onion slices over roast. Let stand in refrigerator 1-2 hours. Split meat in places and add garlic plugs in slashes. Roast at 325 degrees for 1½ - 2 hours or 35-40 minutes per pound.
