Creole black beans

Yield: 6 Servings

Measure Ingredient
2 pounds Smoked sausage, 1" pieces
3 cans Black beans (15 oz.) drained
1½ cup Chopped onions
1½ cup Chopped green pepper
1½ cup Chopped celery
4 eaches Cloves garlic, chopped
2 teaspoons Leaf thyme
1½ teaspoon Leaf oregano
1½ teaspoon White pepper
¼ teaspoon Black pepper
¼ teaspoon Cayenne pepper
1 each Chicken bouillon cube
5 eaches Bay leaves
8 ounces Tomato sauce
1 cup Water

Brown sausage in a skillet over medium heat. Drain fat and transfer to crock-pot. Combine remaining ingredients in crock-pot. Cover and cook on low 8 hours or high 4 hours. Remove bay leaves. Serve over cooked rice.
