Creamy cauliflower au gratin soup

1Envelope Lipton golden onion
Soup mix
3cupsWater
3cupsCauliflower flowerets
1Stalk celery - -- coarsely
Chopped
½cupLight cream or evaporated
Skim milk
¾cupShredded cheddar cheese
¼teaspoonPepper

Directions

In medium saucepan, thoroughly blend golden onion soup mix with water. Add cauliflowerets and celery. Bring to a boil, then simmer covered, striing occasionally, 20 minutes or until vegetables are tender. In food processor or blender, puree hot soup mixture, then return to saucepan. Stir in remaining ingredients. Simmer, stirring occasionally, 5 minutes or until cheese is melted.
