Yield: 4 servings
|4 cups||Cranberry juice,|
|1½ tablespoon||Dried basil|
|1||Onion, thinly sliced|
|3 pounds||(to 3 1/2) chicken, cut in|
|2 tablespoons||Cold water|
|2 tablespoons||Rice vinegar|
|¼ cup||Apple juice concentrate|
Simmer 3 cups of the cranberry juice with the basil and onion slices 10 minutes. Cool; pour over chicken and marinate in the refrigerator overninght. Poach chicken in marinade until tender; keep warm. Simmer remianing ingredients except cornstarch and water mixture about 20 minutes or until berries are tender. Stir in cornstarch mixture and cook until thickened. Serve poured over chicken.
