Cranberry chicken^

Yield: 4 servings

Measure Ingredient
4 cups Cranberry juice,
1½ tablespoon Dried basil
1 Onion, thinly sliced
3 pounds (to 3 1/2) chicken, cut in
2 tablespoons Cold water
Eight pieces
½ pounds Cranberries
2 tablespoons Rice vinegar
¼ cup Apple juice concentrate
1 teaspoon Cornstarch


Simmer 3 cups of the cranberry juice with the basil and onion slices 10 minutes. Cool; pour over chicken and marinate in the refrigerator overninght. Poach chicken in marinade until tender; keep warm. Simmer remianing ingredients except cornstarch and water mixture about 20 minutes or until berries are tender. Stir in cornstarch mixture and cook until thickened. Serve poured over chicken.
