Corny onion shortcake

Yield: 9 servings

Measure Ingredient
¼ cup Butter or margarine
1 large Onion -- sweet finely
\N \N Chopped
1½ cup Corn muffin mix
1 each Egg
⅓ cup Milk
1 cup Corn, cream-style
1 cup Sour cream -- 8 oz.
½ teaspoon Salt
1 cup Cheddar cheese -- 4 oz.
\N \N Shredded divid

In a skillet, melt butter over medium heat. Saute onion until tender.

Remove from the heat and set aside. In a bowl, combine muffin mix, egg, milk and corn. Spread into a greased 9-in. baking pan. Combine sour cream, salt and half the cheddar cheese; spread over the batter.

Sprinkle with the remaining cheese. Bake at 425 deg. for 30 minutes.
