Cooked turkey giblets and broth

Yield: 3 cups

Measure Ingredient
\N \N Turkey neck
\N \N Turkey giblets reserve liver
1 large Onion; cut
1 \N Celery with leaves; cut
\N \N Parsley
1 \N Bay leaf
2 teaspoons Salt
1 quart Water

Place all ingredients (except liver) in saucepan. Cover and bring to boil. Lower heat and simmer 2 hours. Add liver for last 15 minutes.

Strain. Use broth as desired. Chop giblets. Use as desired.
