Cold salmon platter with tarragon marinade

Measure Ingredient
3 \N Potatoes, cooked & halved
2 tablespoons Minced white onion
\N \N TARRAGON MARINADE
1 can (7 1/2oz) salmon, drained &
\N \N Chunked
1 large Sliced tomato
½ \N Sliced cucumber
2 \N Hard boiled eggs, halved
\N \N Chilled lettuce
1 tablespoon Minced parsley
1 tablespoon Chopped green onion

Sprinkle warm potato halves with onion: pour marinade over all. Cover & refrigerate several hours. Drain, reserving marinade. Arrange salmon, tomatoes, cucumbers & eggs on lettuce lined platter; sprinkle parsley on potatoes & green onion on salmon. Serve with reserved marinade.
