Coconut chicken with fresh fruit

Ingredients

| 8 | eaches | Boneless skinless chicken breast halves |
| 2 | tablespoons | Butter or margarine |
| 1 | tablespoon | Fresh ginger root -- chopped |
| Salt -- to taste | ||
| ⅓ | cup | Flaked coconut, toasted & divided |
| 1 | cup | Whipping cream |
| 3 | eaches | Bananas -- quartered |
| 1 | large | Papaya, peeled, seeded & sliced |
Directions
Melt butter in large skillet over medium-high heat; add chicken and cook 4 minutes on each side or until lightly browned. Sprinkle with ginger, salt, and 3 T coconut; add whipping cream. Cover and cook over low heat 10 minutes. Arrange chicken, bananas and papaya on a large platter. Pour warm sauce over chicken and sprinkle with remaining coconut. Garnish with lime wedges and Italian parsley.
