Classic chicken and rice casserole

Ingredients

Vegetable cooking spray
1tablespoonOlive oil
1poundsChicken white meat; pieces
2cupsRice
1mediumOnion; chopped
1mediumRed bell pepper; chopped
1mediumGreen bell pepper; chopped
1Clove garlic; minced
teaspoonSalt; optional
teaspoonBasil
cupChicken stock
1tablespoonLime juice
teaspoonGround saffron OR 1/2 teaspoon turmeric
1Bay leaf
1mediumTomato; chopped
1cupFrozen green peas; thawed

Directions

Spray rice cooker with vegetable non-stick spray. Add all ingredients except tomato and green peas. Stir. Cover and cook until rice cooker shuts off. Carefully remove cover. Fold in tomatoes and peas. Cover and allow to steam for 10 minutes.
