½ cup | Semisweet chocolate chips (1/2 a 6 oz pack) |
Okay, here's a holiday treat that's acceptable in moderation (another to follow when I have time) This is from The Reader's Digest Great Recipes for Good Health Cookbook, which I am enjoying immensely. It's untested: Preheat oven to 250. Line 2 baking sheets with parchment.
Beat egg whites until they hold stiff peaks. Beat in the sugar 1 T. at a time,then beat in the vanilla extract. Reduce speed to low and beat in the cocoa powder. With a rubber spatula, fold in the chocolate chips.
Drop by rounded teaspoons onto baking sheets, spacing 1" apart, and bake 1 hr. Turn off oven and dry cookies in oven 2 hrs longer. Remove and store in airtight container. Makes 40 cookies.
