¼ teaspoon | Baking powder |
¼ teaspoon | Baking soda |
10 ounces | Marachino cherries w/liquid |
½ cup | Butter |
1 cup | Sugar |
1 \N | Egg |
1½ teaspoon | Vanilla |
6 ounces | Semi sweet chocolate chips |
½ cup | Sweetened condensed milk |
Combine flour, cocoa, salt, baking powder & soda. Set aside. Drain the cherries, reserving juice, set aside. Beat butter in large bowl with electic mixer at medium speed for 30 seconds. Add sugar and beat until fluffy. Add egg and vanilla, beating well. Gradually add the dry ingredients, beating until well combined. Shape dough into 1" balls.
Place on an ungreased cookie sheet. Press down on the center of each cookie with thumb. Fill with a drained cherry. In a small saucepan, combine chocolate chips and condensed milk. Stir over low heat until melted. Stir in 4 t. of reserved cherry juice. Spoon 1 tsp of frosting onto each cookie, spreading to cover cherry. Thin with more juice if necessary.
