Chili con carne for a crowd

Ingredients

3cupsChopped onions
6eachesGarlic cloves, mashed
8poundsGround beef
¼cupChili powder or more to taste
1tablespoonSalt
½teaspoonRed pepper
1teaspoonBlack pepper
2eaches48oz cans tomato soup or tomatoes
7quartsRed kidney beans (14 19oz cans) drained and rinsed

Directions

SERVES 50

Brown the beef, garlic and onions until done. Add seasonings, soup and beans. cook slowly for about 30-60 minutes, stirring occasionally. VARIATION: For deluxe chili, provide bowls of grated cheese, chopped onions, tomato and sour cream as toppings for individual servings. Origin: Homestyle, Canadian Classics.
