Chicken with honey-mustard glaze

Ingredients

3 Cloves garlic; halved
1 small Onion; chopped
4 Sprigs fresh parsley
½ cup Yellow mustard
½ cup Honey
2 tablespoons Olive oil (I use extra-virgin)
¾ teaspoon Salt
¼ teaspoon Pepper
1 3-4 pound chicken; quartered

Preheat oven to 350 degrees. Combine all ingredients except chicken in blender or food processor, process until smooth. Place chicken in an oiled baking dish. Spread glaze evenly on top of chicken. Bake, uncovered for 1 hour.
