Chicken salad for company

Ingredients

3Whole chicken breasts poached and cut in bite-size pieces
1largeSweet red pepper cut in julienne strips
2largesHeads broccoli cut in florets
12slicesThick-cut bacon cooked crisp and crumbled
¾cupSour cream
¾cupMayonnaise
tablespoonDijon mustard
tablespoonRaspberry vinegar
2tablespoonsDill, finely chopped

Directions

Combine chicken with red pepper in a large bowl.

In a vegetable steamer, steam the broccoli for 2-3 minutes, or until it just starts to get tender. Add it to the chicken and mix it gently. Mix in the crumbled bacon.

Whisk together the sour cream, mayonnaise, Dijon mustard, raspberry vinegar and dill. Pour the dressing over the chicken and vegetables and mix well. Chill salad for at least 2 hours before serving.
