Chicken fricassee

Yield: 6 servings

Measure Ingredient
1 \N Fryer, cut up
5 tablespoons Flour
½ cup Celery, chopped
½ cup Parsley, chopped
½ teaspoon Dried thyme
3 tablespoons Salad oil
1 large Onion, chopped
3 cups Hot water
1 \N Bay leaf, crumbled
\N \N Salt & pepper to taste

Salt and pepper the chicken. Brown slowly in oil over med. heat.

Remove pcs. of chicken when browned, stir in flour until smooth.

Cook abt. 15 min., stirring constantly until a rich brown roux.

Lower heat, add onion and celery. Cover and simmer about 10 minutes.

Stir often. Gradually stir in water. Add parsley, bay leaf, thyme, chicken pcs., salt and pepper to taste. Cover and simmer about 40 min. Courtesy Telephone Pioneers BillSpalding *P CRBR 38 A
