Yield: 4 Servings
|2 tablespoons||Vegetable oil|
|1 pounds||Chicken, skinned, boned and cut into strips|
|1 medium||Green pepper, sliced lengthwise|
|1 medium||Onion, sliced lengthwise|
|1 cup||Diagonally sliced celery|
|1 \N||Golden Delicious apple, cored and sliced|
|½ cup||Apple juice|
|1 tablespoon||White vinegar|
|2 teaspoons||Soy sauce|
Heat oil in non-stick skillet or wok. Saute chicken until no longer pink; remove from pan. Saute green pepper, onion and celery until tender-crisp.
Return chicken to pan; add apple and cook for 1 minute. Combine remaining ingredients; add to apple mixture and cook until sauce thickens.
