Chicken apple saute

Ingredients

2tablespoonsVegetable oil
1poundsChicken, skinned, boned and cut into strips
1mediumGreen pepper, sliced lengthwise
1mediumOnion, sliced lengthwise
1cupDiagonally sliced celery
1Golden Delicious apple, cored and sliced
½cupApple juice
1tablespoonWhite vinegar
2teaspoonsSoy sauce
1tablespoonCornstarch

Directions

Heat oil in non-stick skillet or wok. Saute chicken until no longer pink; remove from pan. Saute green pepper, onion and celery until tender-crisp.

Return chicken to pan; add apple and cook for 1 minute. Combine remaining ingredients; add to apple mixture and cook until sauce thickens.
