Chicken and apricot stir fry

1 | each | Garlic clove |
2 | eaches | Chicken breast halves |
3 | eaches | Apricots |
1 | tablespoon | Scallion, chopped |
3 | tablespoons | Orange juice |
1 | tablespoon | Soy sauce |
2 | teaspoons | Cornstarch |
¼ | teaspoon | Grated gingerroot |
Directions
Cube boned, skinned chicken breast. Pit and slice apricots. Saute garlic in oil, add chicken, stir fry. Add ginger, stir fry. Add apricots, and scallions. Stir fry. Combine orange juice, soy sauce, and cornstarch. Stir to coat.
