Cheesecake ( vegan )

Yield: 8 Servings

Measure Ingredient
1 8" graham cracker crust, unbaked
1 pounds Tofu,
½ cup Brown sugar
⅓ cup Honey or syrup
¼ cup Oil
2 tablespoons Lemon juice
1 tablespoon Unbleached white flour
1 teaspoon Vanilla
Pinch of salt

Preheat oven to 350 degrees.

Blend all ingredients except the crust in a food processor until smooth and creamy. Pour into the unbaked pie shell and bake for about 45 minutes or until cracks start to form around the edge of the filling.
