Cheddar cornmeal muffins

1-½ cups unsifted all purpose flour ½ cup yellow cornmeal 1 tbsp. 
baking powder ½ tsp. salt Pinch cayenne pepper 1 large egg 1 cup milk ¼ cup (½ stick) butter or margarine, melted 1-¼ cups coarsely grated sharp cheddar cheese. 
Heat oven to 425.  Grease 12 muffin cups. 
In a bowl, blend flour, cornmeal, baking powder, salt and cayenne. 
Beat egg with milk and butter and add to dry ingredients.  Stir until thoroughly moistened.
Stir in 1 cup cheese and spoon batter into muffin cups.  Sprinkle about 1 tsp. of the remaining cheese over each muffin and bake 15 to 20 minutes.
