Ingredients

| 2 | Whole scallions | |
| 1 | teaspoon | Salt |
| 1 | teaspoon | Peanut oil |
| 2 | tablespoons | Soy sauce |
| 6 | cups | Water |
Directions
1. Mince scallions. Place in a deep bowl with salt, oil and soy sauce.
2. Bring water to a boil; pour over scallions, and let stand 1 to 2 minutes.
VARIATIONS: Add with scallions, 1 garlic clove, minced; and/or any fresh, tcnder greens, such as parsley, spinach or water cress, chopped.
For the peanut oil, substitute a few drops of sesame oil.
