Celery pickle (mennonite)

3 | quarts | Celery; chopped |
3 | cups | Vinegar |
1 | cup | Water |
4 | cups | Sugar |
2 | tablespoons | Salt |
1 | tablespoon | Dry mustard |
1 | teaspoon | Turmeric |
Directions
Cut celery stems into 1 inch lengths. Cook in salt water until tender but not soft. Drain. Combine vinegar, sugar, water, and spices.
Bring to a boil. Add celery and bring to boiling point. Pack in jarsand seal.
