Cauliflower and peppers

Ingredients

| 4 | larges | Banana peppers |
| 1 | Head cauliflower; cut into flowerets | |
| 2 | cups | Monterey jack cheese; shredded |
| 1 | medium | Red pepper; chopped |
| 1½ | cup | Milk |
| ¼ | cup | All-purpose flour |
| 2 | Eggs; beaten | |
Directions
Cut banana peppers in half lengthwise. Place on bottom of a lightly greased 10x6x2 inch baking dish. Set aside for now. Steam cauliflower for 8-10 minutes until crisp, but tender. Drain. Place cauliflower on banana peppers and sprinkle with cheese and red peppers. Combine flour and ½ cup of milk, stirring until smooth. Add remaining milk and eggs, stirring well.
Pour this over entire dish. Bake at 350 for 35 minutes.
