Cajun red snapper

1cupSliced celery
1cupChopped bell peppers
½cupMinced onion
1teaspoonGarlic powder
½teaspoonBay leaves
½teaspoonPepper
4cupsPrepared chicken bouillon
2cans(16 oz.)cajun style stewed tomatoes (drained)
1can(6 oz.) tomato juice
4cupsRice

Directions

Preheat oven 400 . Cut catfish into small pieces. Combine all ingredients (except rice) in shallow baking dish. Stir well to combine. Bake for approx. 20 minutes or until catfish is tender and fully cooked. Serve over cooked rice.
