Broccoli with black olives

Salt
1 medium Head of broccoli cut into florets stems peeled and sliced crosswise 1\" thick
2 tablespoons Butter
12 Imported black olives pitted and chopped
Freshly ground pepper

Directions

Bring a large saucepan of water to a boil. Add salt and the broccoli stems and cook for 1 minute. Add the broccoli florets and cook until just tender, about 4 minutes. Drain well in a colander and shake dry.

Return the broccoli to the saucepan and toss with the butter. Add the olives, season with salt and pepper and toss again. Spoon the broccoli into a dish and serve. Food and Wine October 1995
