Brandied fruit

2 | cups | Sugar per each 2 cups fruit |
(This is a "starter" for a pot of brandied fruit. It will take a total of 9 weeks for this to be complete, for eating. After the initial 9 weeks, fruit and sugar may be added at 2 week intervals for an indefinite period of time. Also, after the initial 9 week period, you may remove any amount of brandied fruit and give it to a friend as her "starter." Add more fruit and sugar in proportion to the amount removed.) In a large container (loose fitting cover), add 2 cups sugar and 2 cups bite size peaches. Mix well (do not refrigerate). Stir every day until bubbles disappear, about 3 weeks.
Add 2 cups sugar and 2 cups bite size pineapple. Stir every day for 2 weeks.
Add 2 cups sugar and 2 cups diced apricots. Stir daily for 2 weeks.
Add 2 cups sugar and 2 cups quartered cherries. Stir daily for 2 weeks. It is ready to eat now and may be refrigerated.
This is very much worth the trouble it is to make. Excellent over ice cream. A "starter" makes an excellent Christmas gift.
