Braised leeks & green beans

½cupSherry
1teaspoonOlive oil
5cupsLeeks, well washed
1cupWild mushrooms, sliced
2cupsGreen beans, cut into 1/3\" lengths
1teaspoonOrange juice
½teaspoonOrange peel, grated
1tablespoonCider vinegar
Salt & pepper

Directions

In a large skillet, heat sherry & oil over medium high heat. Add leeks & cook, stirring frequently, for 3 minutes. Add mushrooms & beans. Saute until the mushrooms begin to exude moisture, about 5 minutes. Stir in the remaining ingredients & remove from heat. Serve warm.
