Black-eyed peas and barley pilaf

Ingredients

¾cupQuick cooking barley
¼cupChopped fresh parsley
¼cupChopped onion
1teaspoonDried thyme leaves
½teaspoonSalt
15ouncesCan black eyed peas, drained and rinsed
14½ounceCan vegetable broth

Directions

Combine all ingredients in large skillet or saucepan. Bring to a boil.

Reduce heat; cover and simmer 15-20 minutes or until barley is tender.
