¾cupQuick cooking barley
¼cupParsley, chopped
¼cupOnion, chopped

½teaspoonSalt
15ouncesBlack eyed peas, cooked
14½ounceVegetable broth

Directions

Combine all ingredients in large skillet or saucepan. Bring to a boil.

Reduce heat; cover and simmer 15-20 minutes or until barley is tender.
