Beef oven stew with meatballs

Yield: 2 Servings

Measure Ingredient
1 \N Beaten egg
2 tablespoons Cornstarch
2 teaspoons Instant minced onion
½ teaspoon Dry mustard
¼ teaspoon Chili powder
½ teaspoon Salt
8 ounces Ground beef; (up to 10)
2 smalls Potatoes; peeled/quartered
2 smalls Carrots; sliced
1 small Onion; quartered
8 ounces Tomatoes OR stewed tomatoes; or more
1 \N Beef bouillon cube
3 tablespoons Water

Preheat oven to 350 F. Combine egg, cornstarch, instant minced onion, dry mustard, chili powder and salt. Add ground beef and mix well. Shape into 6-8 balls. Brown in Microwave on High for 6-7 minutes. Placei n 1½ quart casserole. Add potatoes, carrots and onion. Mix together remaining ingredients and heat in Microwave. Pour over meat and vegetables. Cover and bake at 350 ° until vegetables are tender, aobut 1 hour and 15 minutes.
