Basic mushroom duxelles

Yield: 1 cup

Measure Ingredient
3 tablespoons Butter
⅔ cup Onion(s), chopped
2 cups Button mushrooms
\N \N Finely chopped
\N \N (by hand)
¼ teaspoon Salt
¼ teaspoon Sugar
½ teaspoon Soy sauce

Melt the butter in a medium saute pan over medium heat. Add the onion, and saute until it is translucent, about 3 min. Add the mushrooms, salt, sugar, and soy sauce and continue to stir slowly.

The mushrooms will begin to give off liquid. Continue to stir until all the liquid has evaporated and the mixture resembles a paste, 8-12 min. Remove from the heat, let cool, and pack in a jar. Refrigerate or freeze.
