Barbecued pork butt

Yield: 1 Servings

Measure Ingredient
5 pounds Pork butt; (up to 7)
3 tablespoons Sugar
1 tablespoon Garlic salt
2 teaspoons Seasoned salt
2 teaspoons Celery salt
2 teaspoons Onion salt
2 tablespoons Paprika
1 tablespoon Chili powder
1 tablespoon Black pepper
½ teaspoon Allspice
¼ teaspoon Ground cloves
¼ teaspoon Ground ginger

Combine all of the dry ingredients and blend well. Prepare the pork butt as desired. Cook with or without the bone. Trim the cap fat. Season all over with the seasoning mixture. Rub in if desired. Cook on a covered, medium hot grill with a water pan for 7 to 10 hours.
