Baked sole with red onion

1 | teaspoon | Grated Orange Rind |
⅓ | teaspoon | Salt |

½ | cup | Orange Juice |
1 | tablespoon | Wine Vinegar |
2 | teaspoons | Soy Sauce |
1 | teaspoon | Granulated Sugar |
1 | teaspoon | Dijon Mustard |
1 | tablespoon | Unsalted Butter |
1 | tablespoon | Chopped Fresh Parsley |
Place ¾ of the onion in oven proof 11-x6-inch baking dish. Top with sole and remaining onion. Sprinkle with orange rind, salt, and pepper to taste.
Combine orange juice, vinegar, soy sauce, sugar and mustard; pour over fish. Cover with foil and bake in 350F oven for 10 to 12 minutes or until fish is opaque and flakes easily when tested with fork, set aside. Pour contents of baking dish into skillet and bring to boil over high heat; cook for about 5 minutes or until reduced to about ½ cup. Stir in any accumulated liquid from fish; remove from heat and whisk in butter. Pour sauce over fish; sprinkle with parsley.
