Fillet of sole au gratin

Ingredients

| 2 | tablespoons | Chopped onion |
| 2 | tablespoons | Chopped celery salt and pepper to taste |
| 2 | tablespoons | Water |
| 2 | tablespoons | Lemon juice |
| 2 | tablespoons | Butter |
| 2 | tablespoons | Flour |
| 1 | cup | Milk |
| ½ | cup | Grated American cheese |
Directions
Preheat oven to 450. Place fish in a baking pan, sprinkle with mixture of onion, celery, salt, and pepper. Add water and lemon juice; bake for 10 minutes. Melt butter in saucepan, stir in flour.
Add milk; cook over medium heat, stirring constantly, until sauce thickens. Season with salt and pepper. Set aside 2 tb cheese, stir remaining cheese into sauce until it melts. Pour over fish. Sprinkle fish with remaining cheese; bake 10-15 minutes.
