Baked potatoes with basil butter

Ingredients

| 8 | larges | Russet potatoes (about 5 pounds) |
| 1 | tablespoon | Oil |
| ¼ | cup | Basil leaves -- chopped |
| 1 | Clove garlic -- minced | |
| 3 | tablespoons | Olive oil |
| 4 | tablespoons | Butter -- softened |
| Salt and pepper | ||
Directions
Preheat the oven to 400. Scrub the potatoes, pat dry, and rub with a light film of vegetable oil. Bake the potatoes for 1 hour, or until tender. Cook the basil leaves and garlic in the olive oil until wilted, about 30 seconds. Mix into the butter and season liberally with salt and pepper. Serve 4 potatoes with 8 tbsp basil butter.
Reserve 4 potatoes for Crocked Blue Cheese Potatoes and Ham.
