Ingredients

| ½ | cup | Extra-virgin olive oil |
| 1 | medium | Onion, diced |
| 2 | Cloves garlic, crushed | |
| 1 | Slice pancetta | |
| 1 | small | Carrot, peeled and diced |
| 1 | cup | Basil leaves, chopped |
| 12 | Baby artichokes, trimmed | |
| ¾ | cup | Dry white wine |
| Coarse salt & freshly ground black pepper to taste | ||
Directions
In a large skillet over medium heat, heat oil and saute onion, garlic, pancetta, carrot and basil until the onions are soft. Do not brown.
Add artichokes and cook until tender, about 5 to 10 minutes.
Place artichokes in a shallow dish and set aside.
Pour wine into skillet and deglaze pan. Sea- son sauce and pour over the artichokes. Serves 12 as an appetizer.
