Apricot chicken roll-ups

Measure Ingredient
3 tablespoons Seasoned dried bread crumbs
4 3-oz skinless boneless chicken breasts; pounded thin
2 teaspoons Canola oil
¼ cup Apricot spreadable fruit; melted

Preheat broiler. Spray broiler pan with nonstick cooking spray.

Place bread crumbs on large sheet of wax paper. Brush 1 side of each chicken breast with ½ teaspoon of the oil; place oiled-side down on bread crumbs, pressing firmly to coat.

Brush uncoated side of each chicken breast with one-fourth of the spreadable fruit. Rol breass to enclose fruit; secure with wooden toothpicks. Place chicken rolls in prepared broiler pan; broil 4" from heat, 6-8 minutes, until cooked through.

EACH SERVING PROVIDES: ½ fat, 1 fruit, 2 proteins, ¼ bread PER SERVING: 178 calories; 20g protein; 4g fat; 14g carbohydrate; 15 mg calcium; 204mg sodium; 49mg cholesterol; 9 g dietary fiber DAVE <DAVIDG@...>
