Apple jolly boys

½ | pack | Buckwheat pancake mix |
3 | tablespoons | Molasses |
1 | pack | (2 c) corn muffin mix |
1 | cup | Cold water |
2 | tablespoons | Sugar |
1 | cup | Canned or fresh cooked |
Apple | ||
1 | teaspoon | Cinnamon |
Diced | ||
1 | Egg -- well beaten |
Combine mixes with sugar and cinnamon; blend well. Combine egg, molasses and water; stir in gradually. Stir in diced apples. Drop by heaping tablespoonsfuls on hot greased griddle; flatten with back of spoon. Cook slowly, turning often, until well browned on both sides and cooked through.
Set finished cakes in 300F oven to keep warm while remainder are cooked.
