Ambrosia fruit custard

1teaspoonLemon zest
1tablespoonLemon juice
½teaspoonCoconut or almond extract
1can(8 oz.) pineapple tidbits in juice; drained
1cupAssorted sliced fresh fruit
¼cupMini marshmallows or flaked coconut

Directions

Notes: By Patricia A. Miller, Lehighton. The Times News, PA Make pudding according to package directions in bowl. Stir in lemon zest, lemon juice and coconut extract. Reserve ¼ cup pudding for topping. Spoon remaining pudding equally into dessert bowls. Combine remaining ingredients in bowl. Spoon on top of pudding. Top with reserved pudding. Makes 4 servings.
