African vegetarian stew #1

Yield: 8 Servings

Measure Ingredient
4 smalls Kohlrabies; peeled, chunks (may substitute parsnips)
1 large Onion; chopped
2 \N Sweet potatoes; peeled,chunk
2 \N Zucchini; sliced thick
5 \N Fresh tomatoes
1 can (15-oz) garbanzo beans & liquid
½ cup Couscous or bulgar wheat
¼ cup Raisins
1 teaspoon Ground coriander
½ teaspoon Ground turmeric
½ teaspoon Ground cinnamon
½ teaspoon Ground ginger
¼ teaspoon Ground cumin
3 cups Water

Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes.
