A taste of thai layered salad

Ingredients

4 | cups | EACH blanched broccoli and cauliflower |
3 | cups | Bean sprouts, divided |
2 | eaches | Green onions, thinly sliced |
2 | larges | Carrots, sliced diagonally |
½ | cup | Miracle whip salad dressing |
2 | tablespoons | EACH finely chopped green onions and peanuts |
1 | teaspoon | Ground ginger |
Juice and rind of one lime |
Directions
In large bowl, layer broccoli, half of the bean sprouts, cauliflower, remaining bean sprouts, and green onions. Arrange the sliced carrots around the edge of the salad. Chill for 2 hours. Mix the remaining ingredients. Just before serving, pour the dressing over the top of the salad, avoiding the carrots. Sprinkle with additional chopped green onions and peanuts as garnish.
