A taste of thai layered salad

Ingredients

4cupsEACH blanched broccoli and cauliflower
3cupsBean sprouts, divided
2eachesGreen onions, thinly sliced
2largesCarrots, sliced diagonally
½cupMiracle whip salad dressing
2tablespoonsEACH finely chopped green onions and peanuts
1teaspoonGround ginger
Juice and rind of one lime

Directions

In large bowl, layer broccoli, half of the bean sprouts, cauliflower, remaining bean sprouts, and green onions. Arrange the sliced carrots around the edge of the salad. Chill for 2 hours. Mix the remaining ingredients. Just before serving, pour the dressing over the top of the salad, avoiding the carrots. Sprinkle with additional chopped green onions and peanuts as garnish.
