A taste of thai layered salad

Ingredients

Quantity Ingredient
4 cups EACH blanched broccoli and cauliflower
3 cups Bean sprouts, divided
2 eaches Green onions, thinly sliced
2 larges Carrots, sliced diagonally
½ cup Miracle whip salad dressing
2 tablespoons EACH finely chopped green onions and peanuts
1 teaspoon Ground ginger
Juice and rind of one lime

Directions

In large bowl, layer broccoli, half of the bean sprouts, cauliflower, remaining bean sprouts, and green onions. Arrange the sliced carrots around the edge of the salad. Chill for 2 hours. Mix the remaining ingredients. Just before serving, pour the dressing over the top of the salad, avoiding the carrots. Sprinkle with additional chopped green onions and peanuts as garnish.
