| 1 | cup | Sliced zucchini |
| ¾ | cup | Sliced mushrooms |
| 1 | cup | Broccoli flowerettes |
| ¼ | cup | Chicken broth or water |
| ¾ | cup | Halved cherry tomatoes |
| ¼ | cup | Chopped parsley |
| 1 | teaspoon | Lemon juice |
| 1 | teaspoon | Dried basil |
| ½ | teaspoon | Dried oregano Black pepper |
| 2 | cups | Cooked drained spaghetti |
| 2 | ounces | Shredded Mozzarella cheese |
| 6 | tablespoons | Grated Parmesan cheese |
Directions
In large skillet, heat olive oil, add garlic, onion, zucchini and mushrooms, saute until onion is translucent. Add broccoli and broth.
Cover and steam 5-7 minutes or until broccoli is tender crisp. Add tomatoes, parsley, lemon juice and seasonings. Toss thoroughly.
Serve over spaghetti. Sprinkle with Parmesan and Mozzarella cheese.
