Measure Ingredient
4 teaspoons Olive oil
1 \N Clove garlic
½ cup Chopped onion
1 cup Sliced zucchini
¾ cup Sliced mushrooms
1 cup Broccoli flowerettes
¼ cup Chicken broth or water
¾ cup Halved cherry tomatoes
¼ cup Chopped parsley
1 teaspoon Lemon juice
1 teaspoon Dried basil
½ teaspoon Dried oregano Black pepper
2 cups Cooked drained spaghetti
2 ounces Shredded Mozzarella cheese
6 tablespoons Grated Parmesan cheese

In large skillet, heat olive oil, add garlic, onion, zucchini and mushrooms, saute until onion is translucent. Add broccoli and broth.

Cover and steam 5-7 minutes or until broccoli is tender crisp. Add tomatoes, parsley, lemon juice and seasonings. Toss thoroughly.

Serve over spaghetti. Sprinkle with Parmesan and Mozzarella cheese.

Makes 4 servings. 1 serving = 301 calories.
