1 cup | Sliced zucchini |
¾ cup | Sliced mushrooms |
1 cup | Broccoli flowerettes |
¼ cup | Chicken broth or water |
¾ cup | Halved cherry tomatoes |
¼ cup | Chopped parsley |
1 teaspoon | Lemon juice |
1 teaspoon | Dried basil |
½ teaspoon | Dried oregano Black pepper |
2 cups | Cooked drained spaghetti |
2 ounces | Shredded Mozzarella cheese |
6 tablespoons | Grated Parmesan cheese |
In large skillet, heat olive oil, add garlic, onion, zucchini and mushrooms, saute until onion is translucent. Add broccoli and broth.
Cover and steam 5-7 minutes or until broccoli is tender crisp. Add tomatoes, parsley, lemon juice and seasonings. Toss thoroughly.
Serve over spaghetti. Sprinkle with Parmesan and Mozzarella cheese.
