1cupSliced zucchini
¾cupSliced mushrooms
1cupBroccoli flowerettes
¼cupChicken broth or water
¾cupHalved cherry tomatoes
¼cupChopped parsley
1teaspoonLemon juice
1teaspoonDried basil
½teaspoonDried oregano Black pepper
2cupsCooked drained spaghetti
2ouncesShredded Mozzarella cheese
6tablespoonsGrated Parmesan cheese

Directions

In large skillet, heat olive oil, add garlic, onion, zucchini and mushrooms, saute until onion is translucent. Add broccoli and broth.

Cover and steam 5-7 minutes or until broccoli is tender crisp. Add tomatoes, parsley, lemon juice and seasonings. Toss thoroughly.

Serve over spaghetti. Sprinkle with Parmesan and Mozzarella cheese.

Makes 4 servings. 1 serving = 301 calories.
