'egg' salad

Yield: 4 Servings

Measure Ingredient
8 ounces Tofu; medium firm, shredded
2 \N Green onions; chopped
1 tablespoon Fresh parsley; chopped, or more
1 teaspoon Curry powder
¼ cup Mayo or almondaise (use your favourite)
\N \N Salt + pepper to taste
\N \N Paprika sprinkled on top

Date: Tue, 30 Jul 1996 10:25:42 -0400 Mix the first six together until colour is consistent. For a large group, put lettuce leaves around the bowl first, pack in the 'egg' salad, then form a sunny happy face with a spoon. For some reason, people love it and get a real kick out of this.
