Yield: 4 -6 serving
|3½ cup||Grated zucchini--; (grate it coarsely)|
|3 \N||Eggs; beaten|
|½ cup||Grated mozzarella cheese|
|½ cup||Grated parmesan cheese|
|1 tablespoon||Fresh basil leaves; minced--, (if you don't have fresh, use 1/2 teaspoon dried)|
|\N \N||Salt and pepper|
Salt zucchini lightly and let stand for 15 minutes. Squeeze out all excess moisture.
Combine all crust ingredients. Spread into an oiled 9 x 13-inch baking pan.
Bake 20 to 25 minutes, until surface is dry and firm. Brush the top with oil and broil it, under moderate heat, for 5 minutes.
Pile on all of your favorite toppings. Bake about 25 minutes.
