Zucchini pizza^

Yield: 12 servings

Measure Ingredient
4 cups Shredded peeled zucchini,
\N \N Drained and pressed dry
2 cups Cooked rice
1 pounds Ground beef, browned with
1 medium Chopped onion
1½ cup Spaghetti sauce
1½ cup Shredded mozzarella cheese
1 cup Grated Parmesan
2 \N Eggs
1 teaspoon Oregano
½ teaspoon Salt
2 cups Shredded cheddar cheese



Combine crust ingredients and press into a greased 15X11X1" jelly roll pan. Bake at 400F. 20-25 minutes until set and lightly browned.

Combine filling ingredients except for cheddar. Pour over crust, sprinkle with cheese. Bake at 400F. 15 minutes. Let stand 5 minutes before cutting and serving.
