White trash fried eggplant

Yield: 3 servings

Measure Ingredient
Wash and peel eggplant. Cut into 1/2 inch rounds. Mix 1 egg and 1/2
cup Of milk, and dip the rounds into this mixture. Dredge in seasoned
Cracker or corn meal, (or flour) and fry until golden brown. Serves 3-4.
