Warm radicchio cheese puddles

Yield: 6 servings

Measure Ingredient
2 teaspoons Extra-virgin olive oil
2 teaspoons Lemon juice
6 larges Radicchio leaves,rinsed and dried
3 ounces Teleme or Jack cheese,cut into 1/4\" thick slices
\N \N Freshly ground pepper

Mix oil and lemon juice; brush mixture all over radicchio leaves. Set leaves, cut side up, in a 9x13" baking dish. Place an equal portion of the cheese in each radicchio cup. Sprinkle with pepper.

Bake in a 350'F. oven just until the cheese melts, 4-6 minutes. Serve hot or warm.
