2 teaspoons | Extra-virgin olive oil |
2 teaspoons | Lemon juice |
6 larges | Radicchio leaves,rinsed and dried |
3 ounces | Teleme or Jack cheese,cut into 1/4\" thick slices |

Mix oil and lemon juice; brush mixture all over radicchio leaves. Set leaves, cut side up, in a 9x13" baking dish. Place an equal portion of the cheese in each radicchio cup. Sprinkle with pepper.
Bake in a 350'F. oven just until the cheese melts, 4-6 minutes. Serve hot or warm.
