Vegetable soup (santa maria)

Ingredients

| 2 | tablespoons | Oil |
| 1 | medium | Onion, sliced |
| 3 | cups | Chopped mixed vegetables |
| 2 | teaspoons | Salt |
| ½ | teaspoon | Black pepper |
| 2 | tablespoons | Soy sauce |
| 1 | litre | Water |
| 1 | bunch | Watercress cleaned & chopped |
Directions
Heat oil in a soup pot & stir fry onion for 1 minute. Add vegetables, salt, pepper & soy sauce. Fry together for 2 minutes. Add water & bring to a boil. Simmer till the vegetables are tender. Add watercress & serve.
